Bibim Guksu is the Korean cold noodle dish you didn’t know you needed — sweet, spicy, tangy, and incredibly refreshing.

Ingredients (2 servings)

2 packs Hungry Korean Thin Ramen Noodles, 2 tbsp gochujang, 1 tbsp Hungry Korean Gochugaru Chili Flakes, 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, 1 tsp honey or sugar, 1 tsp toasted sesame seeds, 1/2 cucumber (julienned), 1/2 cup kimchi, 2 soft-boiled eggs.

The Sauce

Combine the gochujang, gochugaru, soy sauce, rice vinegar, sesame oil, and honey in a bowl and mix well. Taste and adjust — it should be spicy, tangy, and just slightly sweet. This sauce keeps in the fridge for a week and works on virtually everything.

Method

Cook noodles, rinse immediately in cold water, drain well. Toss with the sauce until every strand is coated. Divide into bowls and top with cucumber, kimchi, and a halved soft-boiled egg. Scatter sesame seeds over the top.

Serve immediately — or refrigerate for up to 30 minutes for an even colder, more refreshing bowl.
